Chocolate Truffles

Sometimes you just want a chocolate fix. These are perfect, as they contain no sugar but are rich and can be adapted by changing the cocoa content of the chocolate and adding flavours or nuts to the mix.

Chicken curry

A tasty curry sauce, which you can add additional heat to with extra chillies, if you wish.  Making your own curry paste, means you could make a double batch and pop some in the freezer for a quick curry another night.  Perfect with any meat / veg / halloumi - not just chicken!

'Cannelonni'

Fantastic comfort food, filled with spinach and ricotta. Perfect for vegetarians but you can add cooked chicken into the mixture, if you prefer.  Leek takes the place of the pasta tubes in this delicious recipe

Cauliflower waffles

Picture
A delicious way to use up cauliflower rice or just to try it in a different way.  You can add other ingredients to the waffles to vary the flavours.  Delicious served with avocado, egg, bacon etc for a tasty, quick and satiating brunch.
These can also be cooked like a pancake if you don't have a waffle maker

Thai Chicken Curry

You need a few specialist ingredients here but it really is worth making your own curry paste - double up and keep a batch in the freezer.  
This recipe uses chicken but you could substitute that easily for another protein source or make a vegetable curry.

Cottage pie

This traditional comfort food is given a lower carbohydrate twist by using swede instead of potato to top.  You could also try with pureed cauliflower or celeriac for a change.  
Adding additional vegetables will add a few extra carbs but also flavour and nutrients

Spinach pancakes

These versatile pancakes are suitable for breakfast, lunch or as an accompaniment to a main meal. delicious eaten hot or cold and can be made in advance and stored in the fridge / freezer until needed.
Top them with ham and cheese, bacon and eggs, guacamole and salsa or just enjoy them straight from the pan.
